Monteflavio. Festival of Polenta and mutton chops

October is the month when you start eating polenta and in Monteflavio have dedicated the Festival of Polenta and mutton chops.

Polenta is prepared according to local tradition with pork, cooked with bacon and sausage, and castrate chops.

Polenta is cooked in the characteristic “cotturi”, large copper pots, and hand-turned by volunteer “forced”.

It is then served in the typical wooden “scifitti” which are then given as a gift to commemorate the festival and local traditions.
