Two days of celebration in Tolfa are dedicated to Ghighe, the famous traditional long pasta made with water and flour.
The ghighe are seasoned with a sauce made from tomato and pork cheek.
The menu of the festival includes tasting of other typical dishes such as pasta with truffles, snails, grilled local meat and artisanal desserts: all with local products.
The Ghighe festival is promoted by the Rione Poggiarello.
