Anguillara Sabazia. Eel in Cacciatora's way

Eel in Cacciatora's way (anguilla alla cacciatora) is a traditional dish of Anguillara Sabazia on Lake Bracciano.

The eel is first cut into small pieces, floured and browned in hot oil.

At this point it is flavored with a pesto based on parsley, garlic, sage and everything is blended with white wine and vinegar.

It is a dish to be enjoyed hot.
