The frisa or frisella is one of the emblems of Cellino San Marco and Salento region: a crispy bread ready to accept condiments with cherry tomatoes or Mediterranean vegetables.
Its origin is probably due to the need to preserve the bread for as long as possible thanks to the fact of cutting it, when it was not yet completely cooked in the oven, and to putting it back immediately in the oven to proceed with the baking.
Its traditional shape was that of a donut but today it is found in various shapes and prepared with various cereals.
To prepare it, dip it in water and then season with oil, tomatoes and oregano. Today there are gourmet versions of the frisella that are seasoned with the chef's ‘imagination’.
