Anguillara Sabazia. Fried and/or Marinated Latterino 

Latterino is a very small fish typical of the Lake of Bracciano that in Anguillara Sabazia is eaten raw or cooked.

Its bitter taste of the fish is enhanced by a marinade with vinegar, sage, red pepper, garlic and rosemary.

If fried it is kneaded with flour, salt and pepper!
