Anguillara Sabazia. Giuncatina cheese

Thanks to sheep farms, Anguillara Sabazia produces various tasty cheeses including pecorino and the famous 'giuncatina', a soft cheese obtained from the first stage of cheese processing.

The name derives from the container in which the semi-liquid pasta is put which is made with rush.
