A must try experience, surrounded by greenery and absolute peace, listening to the stories of Livio and his family who directly produce this ancient grain called “monococcum wheat”. 

Monococcum or Einkorn Wheat Pasta has a unique and inimitable flavor, its special ingredient is the wheat which has excellent natural resistance to disease and environmental stress. It is a dish rich in proteins, antioxidants, vitamins, zinc, iron and phosphorus.

Livio Perini cultivates his “Monococco wheat” with love and passion in the countryside of Paliano, and it’s his wife Marina who works hard to create the special dishes that have this grain as a protagonist.

Eggs, wheat, tomato, ricotta are all ingredients produced on the farm or by the neighboring producers.

Monococco Wheat Pasta topped with vegetable garden sauce and a drizzle of oil obtained from an ancient local variety is the main dish served at the Bertacco Farmhouse.
