The Itri olives are a basic food in local life and it is one of the most famous cultivar in Italy.
They are also called Olives of Gaeta because once they left from the port of Gaeta to reach the markets of the whole Mediterranean.
They are small and have a colour ranging from purple to beige. In the restaurants of the area they are served pickled in earthenware bowls and accompany the whole meal.
From these olives a dense, scented oil is produced that is low in acidity and of high quality.
