Ladispoli. Roman artichoke

The Roman artichoke is also called "cimarolo" or "violet". It has a spherical shape, is compact and has no thorns.

It is harvested from February to May, and is widely used in the preparation of typical dishes such as Jewish artichokes, Roman, matticella.

The artichoke of Ladispoli and Cerveteri has obtained the DOP designation.
