Tarquinia. Scorzone Truffles

The summer black truffle or scorzone of Tarquinia has a scent not overly strong and a bitter mushroom flavour.

Truffles are found in the vicinity of oak and turkey oak trees and are collected between May and July.

The ancient Romans considered it, along with the farro, an important tonic.

The presence of the product in this district is attested from the Middle Ages, but the collection has spread since the early 1970s.
