With its alcohol content of 12.5 percent it is excellent both as an aperitif to open the conviviality of meetings and in lunches based on fish and white meats or in all vegetarian cuisine.
The Sauvignon IGP of the Antica Tenuta Palombo combines tradition and innovation with the historical vines of the Val di Comino and a modern and innovative cellar.
The processing of the grapes takes place with cryomaceration for 24 hours, then a subsequent decantation and fermentation at a controlled temperature.
The grapes are harvested in early September to enhance the herbaceous aromas but also those of white and exotic fruit. A freshness that is found in the taste and that allows you to experience different combinations.
Sauvignon grapes are now part of the culture of Val Comino where they have found a clay-calcareous soil capable of giving the wine intriguing flavours. The strong thermal excursions of the valley add personality to this wine.
