Montefiascone. Feast of San Pancrazio and Sweet Ravioli Festival

On May 12th in the hamlet of Le Coste of Montefiascone, San Pancrazio is remembered and reverred with religious celebrations but also with fun.

As well as the torchlight procession and the religious procession accompanied by the musical band, popular games are held, theatrical performances are presented in dialect and it ends with the traditional fireworks.

The discovery of local flavours involves the Festival of sweet Ravioli, also commonly known as "Tacconi", one of the traditional desserts of Montefiascone which owes its name to its square shape.

The filling is made with ricotta from locally raised sheep and seasoned with eggs, sugar, rum, lemon, alchermes and vanilla.

The ravioli is then fried and served hot on the stands at the festival.
