An all-Italian delicacy, polenta is prepared by the expert hands of the members of the Pro Loco of Castel di Tora.
The polentone is a particular type of polenta, thicker and harder than normal, obtained by using a larger quantity of flour.
The polentone is cooked in the square in large cauldrons, spread on the tables and cut with string, according to the customs of the past.
It is served with "raw" oil from the Sabina or accompanied by the sauce of "lean", a seasoning based on fish prepared with herring, tuna and cod.
