Anguillara Sabazia. Golden Fried Pike

Pike is a typical freshwater fish from Anguillara Sabazia on Lake Bracciano.

The fish first boiled in water and vinegar to be prepared for browning.

Then it is wrapped in a batter of eggs, pepper, salt, flour and breadcrumbs.

At this point it is fried and can be eaten both cold and hot.
