Cellino San Marco. Cellina Olives and Terra d’Otranto Oil

In Cellino San Marco one of the best oils of Puglia is produced called Terra d 'Otranto DOP Oil and is made with Cellina or Saracena and Ogliarola olives.

It is a fruity oil with a sweet taste and a slight scent of legumes and a fragrance of grass.

On this olive there is a dispute whether it is the town that takes its name from the cultivar or vice versa: certainly on the emblem of the town stands an olive tree. The name Cellino then seems to derive from the Greek which indicated a black olive.

The Romans love the olives of Salento and all the authors of the time from Marco Porcio Catone to Pliny, from Orazio up to Giovenale talk about an olive "licinia" that could be interpreted as ‘olive cilino’ and therefore the current cellina.

Beyond history, today the oil is famous throughout the world and is the basis of a rich and tasty local cuisine.
