Cisterna di Latina. Cisternese Sweet of the Buttero

The Cisterna di Latina Confectioners Association has created a dessert to pay homage to the buttero (cow boy) which is one of the symbols of life in the Pontine marshes before their reclamation.

For this dessert, poor ingredients were used that the buttero of the Pontine swamp could have had available.

Walnuts, sugar, honey, butter, cream, whole eggs, flour and raisins that are combined for this cake.
